Gnocchi Paddle in Bubinga
This style of board dates back to the 16th century. The cooler climate of Northern Italy provided great conditions for potatoes & pretty mediocre grains. Hence the wonderful gnocchi was born. The ribs on the board give the pasta its characteristic ridges, adding surface area for sauce to hang on to. This paddle is made from a single piece of Bubinga hardwood then hand shaped.
